3 cups of diced watermelon
2 cups chopped red tomatoes
cup diced cucumbers
2 tbsp chopped cilantro
cup coarsely chopped yellow bell pepper
1 tbsp extra virgin olive oil
1 tbsp rice wine vinegar
Rock salt to taste
tsp hot sauce
1 tbsp of freshly squeezed lemon juice
Mint leaves for garnish
Combine the diced watermelon, tomatoes, cucumbers, chopped cilantro, yellow bell peppers, olive oil and vinegar together in a bowl.
Pulse them together in a food processor until they are finely chopped.
Return into the bowl and season with rock salt, black pepper and lemon juice.
Pour into bowls or glasses.
Garnish with mint leaves and serve chilled with ice.
