Tandoori Salmon

Get the authentic tandoor experience with this recipe from Indego

* Serves Four *


1 fillet salmon
5gms ginger and garlic paste
5 gms ginger (chopped)
1pc chilli (ground)
10gms coriander stem
10gms dill leaves (chopped)
2tbsp mustard paste
1tbsp red chilli paste
1tbsp Kashmir chilli
2tbsp honey
1tbsp yoghurt
15ml lime juice
Salt to taste
5gms turmeric powder
5gms chilli powder
15ml oil

For Dum

1tbsp ghee
2gms cloves
2gms ground cardamom

Clean the fillet and cut into chunks of equal size, with skin on. Keep aside.
Mix all the listed ingredients in a large bowl. Infuse all ingredients with oil. Apply this marinade to the fish chunks. Dum cook it using cloves, cardamom and ghee and leave it like that for 6-8 hrs.
Skewer the marinated fish chunks an inch apart. Roast in a moderately hot tandoor for 2mins, or in a moderate oven until cooked. Baste fish with butter and return to the oven for a further 2 minutes.
