The powerhouse behind Studio 8 shares her light and yummy take on Chicken Fried Rice

Sarah Belhasa tells us that she chose to share a Chicken Fried Rice recipe with us because it is a personal fave with her. And then the stylista behind Studio 8 adds that if you've got some fab Chicken Fried Rice, you need some great gravy with it too. So we got not one but two personalised recipes from Sarah. Double bon apps!


Chicken Fried Rice

Ingredients:
Chicken 4 large pieces (cut in long and thin strips)

Rice 4 cups (cooked)

Spring onions 6 sprigs (thinly sliced)

Long beans 150gms (thinly sliced)

Garlic 2 cloves (finely minced)

Green chillies 4 pieces (finely minced)

Cabbage 150gms (thinly sliced)

Carrots 150gms (thinly sliced)

Capsicum 150gms (thinly sliced)

Soya 2tblsps

Salt and pepper to taste

Oil

Method:
Boil the chicken.

Saut the garlic and spring onions in oil for 5 minutes.

Add the vegetables (beans, cabbage, carrots and capsicum), green chillies and chicken. Stir fry for 10 minutes.

Add 2 tblsps of oil and when it heats up, stir in the cooked rice. Add the soya sauce and salt and keep mixing. You can also add in some scrambled eggs if you like.


Chicken Gravy

Ingredients:
Chicken 500gms

Onions 1

Garlic 2 cloves, chopped

Capsicum 1

Tomato paste 2tblsps

Maggi Knorr cubes 2

Soya sauce 2tsps

Cornflour 1 tblsp

Method:
Saut the onions, garlic and capsicum in oil.

Mix in two mashed Maggi Knorr cubes, and add soya sauce and salt to taste.

Add the chicken and stir the mixture.

Add the tomato paste, and then the cornflour (mixed with water).

Garnish with coriander leaves
