Recipe of the Day: Orange Drizzle Cake

No meal is complete without a bit of sweetness. This Ramadan, as you prepare and relish a lavish iftar (amidst the lockdown), here is a sweet dose to end your meal. Even otherwise, if you are a cake lover, give the usual chocolate based ones a miss and go for a fruity experience. London-based chef Sujata Sagrani sends us this amazing recipe. Try it today!
1 small carton yogurt
1 yogurt carton vegetable oil
3 yogurt cartons self-raising flour
2 yogurt cartons caster sugar
Zest and juice of one orange
Juice of one orange
Mix all the dry ingredients together. Add the oil, eggs and yogurt and mix with a wooden spoon. Add the orange juice and zest. Turn mixture into a round baking tin and bake at 200 degrees for 20 minutes and then turn down the heat to 180 degrees and bake for 40 minutes. You can also use a loaf baking tin. Whilst the cake is cooling make the glaze. Squeeze the juice and add approximately five tablespoons of icing sugar. The consistency should be slightly thinner than a mixture that coats a spoon. Mix thoroughly and then glaze the cake spreading the mixture evenly and thinly across the top of the cake. Allow the mixture to drizzle down the sides of the cake. Make sure the cake is properly cooled before you glaze it. Leave to set for about and hour. Decorate with sliced orange pieces as in picture.
