Recipe: Greek Salad on Toasted Pita

Perfect for cheese lovers!

INGREDIENTS
2 medium whole wheat pita bread
2 tbsp hummus, any flavour
cup baby spinach
cup mixed baby
greens lettuce
cup cherry
tomatoes, diced
cup cucumbers, diced
cup carrots, diced
Few slices of red onion, diced
cup avocados, diced
25g crumbled low-sodium, low-fat feta cheese
1 tbsp of extra virgin olive oil
1 tsp oregano and tarragon
1 tbsp rice vinegar

METHOD
Wash all vegetables well, rinse and dice them.
Toast the pita in an oven at 350 degrees Celsius.
Mix the olive oil with oregano, tarragon and
rice vinegar to make
the dressing.
Spread one tablespoon hummus on each pita.
Add all the veggies onto the pita with the spinach
and lettuce.
Sprinkle on feta cheese then drizzle Italian dressing on top.
