RECIPE: Achari Aloo Tikka from Sukh Sagar Dubai
Traditional spices make for this amazing desi dish from Sukh Sagar Dubai
250 g baby potatoes
50 g yoghurt
20 ml mustard oil
5 g ginger-garlic paste
3 g Kashmiri chilli powder
1 g kasoori methi powder
2 tsp garam masala powder
2 g chaat masala
5 g achari masala powder
5 g mix pickle extract
2 g black salt
Parboil the potatoes and peel the skin once they have cooled.
Prepare the marinade by mixing yoghurt, oil and the other spices with the ginger & garlic paste.
Marinate the potatoes for at least two hours so they have soaked in the flavour and spices.
Grease a pan or tray, arrange the marinated potatoes, drizzle some oil over them and bake for 15 to 20 minutes at 180 degrees Celsius.
Remove once cooked & serve hot.
