Paneer Seekh Kabab

High protein and delicious

For the marinade:
1 1/2 tsp ginger paste
1 tbsp finely chopped onions
1/4 cup maize flour
Salt to taste
Other ingredients:
1/2 cup chana dal
1 tsp canola oil
1/2 tsp carom seeds
1 tsp chilli flakes
1 tbsp chopped coriander
1 tsp chopped mint leaves
1 1/2 cups crumbled low-fat or regular paneer
Salt to taste

Combine the chana dal and one cup of water and cook on a medium flame till the dal gets cooked and the water dries up. Leave to cool.

Combine the cooked dal and the marinade in a bowl.

Mix well with your hands and keep aside.

Heat 1 tsp of oil in a non-stick pan, add the carom seeds and stir for 30 seconds. Add the chilli flakes, coriander, mint leaves and saut on a slow flame for another 30 seconds.

Add the dal mixture and cook on a low flame till the mixture is completely dry.

Add the paneer and salt and knead into a stiff dough, ensuring that the mixture is as dry as possible.

Divide the dough into 12 equal portions and keep aside.

Make long kebabs, put them on skewers and cook in a tandoor for 10 minutes.

Serve hot with lemon slices, salad and spicy coriander chutney.
