Nutritious Berry Breakfast

A delicious and unique breakfast

Nutritious Berry Breakfast
Yields 4 servings
Calories: 135 calories per serving

NGREDIENTS
cup quinoa, rinsed
1 cup strawberries
1 cup blueberries
1 cup cherries
Zest of 1 lemon
Juice of 2 lemons
1 tbsp honey
2 tsp balsamic vinegar
2 tsp chopped fresh mint
1 cup thick low- fat Greek yogurt

METHOD
Rinse the quinoa and cook
for 10 minutes until done. Cool in the refrigerator while you prepare
the salad.
Wash and rinse the fruits. Be
sure to de-seed the cherries
before mixing.
Toss the fruit together in a big bowl with lemon zest, lemon juice, honey, balsamic vinegar, fresh mint and salt.
Add the cooked quinoa and
mix well.
Top it off with Greek yoghurt.
Serve immediately.
