2 medium sweet potatoes
1 tbsp of crumbled low sodium low fat feta cheese
1 tsp parsley chopped
Few drops of lemon juice
1 tsp olive oil
Salt for taste
Crushed black pepper
? Pressure cook the sweet potatoes with the skin on. After two to three whistles have sounded, leave the potatoes in for 15 minutes.
? Take the potatoes out and put it on a serving bowl. Drizzle the olive oil, a few drops of lemon, salt and crushed black pepper over it and start mashing the potatoes with a fork while the skin is still on.
? Sprinkle crumbled feta cheese over the mash.
? Garnish with chopped parsley.
