Soire's director whips up a healthy steamed fish dish
Mariya Kassam doesn't let her busy schedule get in the way of sound diet choices. Her recipe pick involves white meat and it's steamed to boot - it's the healthy option all the way, and that's the way the lady likes it. Go on, try the light and finely flavoured meal!
Steamed Ugandan Boneless Fish
Ugandan Boneless Fish 1/4kg (cut into 4-6 pieces)
Ginger 2 thick slices (finely chopped)
Soya sauce 1/4 cup
Rice vinegar (to taste)
Red bell pepper
Carrot, lemon and coriander (for garnishing)
Marinate the fish in ginger, soya sauce and rice vinegar, wrap in foil and keep aside for 3 hours.
Steam fish in the oven for 10-15 minutes.
For garnishing cut very narrow strips of red bell pepper and ginger.
Sprinkle with coriander, finely sliced carrots and lemon and it is ready to serve.
