Greek style Quinoa salad
A refreshing substitute for rice!
1 cup rinsed quinoa 2 cups of homemade vegetable broth cup cucumber (cubed)Few black olives pitted and sliced cup red onions (sliced) cup cherry tomatoes2 tbsp chopped parsley cup low-fat and low-sodium feta cheese 1 tsp extra virgin olive oil1 tbsp lemon juicePinch of salt and pepper
Boil quinoa with the broth for 10 to 15 minutes until it has cooked completely.Cool down the quinoa.Add all the ingredients and mix well. Drizzle with olive oil, lemon juice, salt and pepper.
