Gluten-Free Gingerbread People

Delicious Christmas treats you can make at home

INGREDIENTS

2 cups rice flour

cup tapioca starch

cup potato starch

1 tbsp ground ginger

1 tsp cinnamon

tsp nutmeg

tsp baking soda

tsp salt

tsp ground cloves

tsp xanthan gum

cup butter

cup brown sugar

cup molasses

1 egg

METHOD

In a medium bowl, using a wire whisk, stir together the rice flour, starches, spices, baking soda and salt.Using an electric mixer, beat the butter on medium speed, then beat in the brown sugar, molasses and egg. Add the dry ingredients and combine.Remove the dough from the bowl and divide in half. Place each half on a piece of plastic wrap, flatten into a disc shape, wrap and refrigerate for at least 2 hours until firm.Preheat oven to 180C and line a couple of baking sheets with parchment paper.On a clean surface with rice flour, roll out the dough to inch thickness. Cut out the gingerbread people using cookie cutters.Place on the prepared baking sheets, bake in the centre of the oven until the cookies appear set, about 8 - 10 minutes.Remove from the oven and leave to cool. Decorate only when they're completely cool.
