Boondi Ladoo from Puranmal
Makes 12-14 pieces
? 250g besan (gram flour)
? 200g sugar
? Orange food colour as required
? 1tbsp green cardamom seeds
? 10 almonds, blanched
? 10 pistachios blanched and slivered
? Saffron leaves
? Cook sugar with three cups of water to make syrup of one thread consistency. Add colour and some saffron as desired into the sugar syrup then keep it aside.
? Make a thin batter of besan with three cups of water till it reaches a pouring consistency and add colour as desired.
? Heat sufficient ghee in a kadai. Hold a perforated spoon over the hot ghee, pour a little batter over it and pass the batter through it fast into the kadai to make boondis. Fry for about two to three minutes.
? Remove the boondis using a slotted spoon, drain thoroughly and put into the syrup. When the boondis have absorbed all the syrup, add cardamom seeds, slivers of pistachios and almonds and mix gently.
? Divide into 25 portions and shape each into a ladoo. Garnish with slivers of pistachios, almonds and saffron leaves. Cool and store.
