Diwali Recipe: Banjan Borani

Ingredients (Serves 4)

  • Extra Virgin Olive Oil                                                        1 ½ Tsp
  • Cumin                                                                                 1 Tsp
  • Full Cream Yogurt                                                              250 gm
  • Garlic (Finely grated)                                                         1 Tsp
  • Salt                                                                                      To taste
  • Cumin                                                                                 1 Tsp
  • Olive oil                                                                              2 Tbsp
  • Eggplant sliced (1 inch thick)                                             1 Nos (Large)
  • Tomato Paste                                                                       200 gm
  • Coriander Leaves                                                                Garnish


  • Temper Cumin in Olive oil
  • Put it aside to cool
  • Heat oil in a pan on medium flame. Once hot, add the eggplants slices and fry till they are golden brown in color. Do not over-fry it else the slices will become very soggy, you still want it little firm in the center.
  • Place the eggplants slices on a kitchen towel to drain excess oil. Set aside.
  • Spread a thin layer of tomato paste on the fried eggplant slices
  • Mix the grated garlic, cumin, salt and the yogurt and whisk it well
  • Place the eggplant slices on the yogurt sauce
  • Garnish with the remaining olive oil and fresh coriander leaves
