1 cup fresh basil,
1/2 cup fresh parsley
2 small fresh tomatoes, chopped
4 tbsp olive oil
2 tbsp pine nuts
4 garlic cloves
2 tbsp homemade vegetable broth
1 tsp freshly squeezed lemon juice
1 tsp salt or more to taste
1/4 tsp black pepper
Place all ingredients into a food processor and blend to desired consistency. Store in an airtight container and refrigerate until ready to use.
INGREDIENTS - SALMON:
300g salmon fillets
2 cups red, yellow, green
and orange bell peppers
2 tbsp of homemade
Salt if required
Preheat oven to 400 degrees Farenheit.
Cover a baking dish with aluminium foil and add a few drops of olive oil so the salmon doesn't stick.
Place the fillets in the dish and spread pesto sauce on top of them evenly.
Garnish with sliced bell peppers and bake for 15 to 20 minutes. Serve hot.
